I can’t believe it took me a quarter of a century to come up with this: buffalo cajun mac ‘n cheese. This is life changing.

Keep in mind, I’m not one to use precise measurements, particularly when I’m making a meal up as I go as was the case with this. But if you follow what I have below, you’ll end up with something similar.
1. Using a whisk, mix ingredients at low-heat on the stove until creamy:
Around 1-1.5 cups of crumbled Yancey’s Fancy Buffalo Cheddar (crumbled)
1/2 cup of milk
1/3 stick of butter (don’t you dare use margarine)
2 tbsp of Frank’s Red Hot Buffalo Wing sauce
2 tbsp cajun seasoning
1 tbsp garlic powder
1 tbsp fresh and finely chopped parsley
A couple of dashes of Tabasco sauce
A dash of lemon juice
A dash of white wine vinegar
A spoonful of flour
Add sea salt and freshly ground pepper to taste
2. Boil macaroni (I used a larger ziti macaroni).

3. Combine cheese sauce with macaroni.

4. Have your world rocked while you eat it.
If you can’t find Buffalo-flavored cheese in your area, go buy a block of nice, aged cheddar (not Velveeta) and just add another tablespoon or two of Frank’s Red Hot and some cayenne pepper.
